"In newly energized
Viejo San Juan, Panza is a contemporary take on civilized chic. In the Hotel The
Cervantes, a restored eighteenth-century building, the restaurant is warm and
cozy despite its high ceilings, polished marble and stone and metallic accents.
Its subtle tasty cuisine combines meat and seafood with flavors: lobster bisque
with coconut; fried calamari in salad of frisée and banana with a miso-orange
vinaigrette; and roasted boar chop with white-bean chili in a plantain
basket"
 In Spring, of
2006, Panza Restaurant opened its doors in a restored 18th century building in
Old San Juan, Puerto Rico.
Panza is the result of the vision
and efforts of the C Group Hotels team, which consists of passionate individuals
who work tirelessly towards making Panza a unique gastronomic
experience.
We bring a new
approach to a clean and distinctive cuisine with attention to the
flavors.
Our guests are
welcomed by lush decor and lighting to set the mood for and exceptional
experience. The dining room also boasts a lovely bar, and extensive wine
collection.
A sidewalk cafe
graces the historic facade of the The Cervantes. On the open terrace located on
the top floor, a party of 50 persons can be comfortably accommodated for
special gatherings.
Panza brings a lot more to
the table than just great food. We focus on creating intricate work of culinary
art, where stimulating flavors are juxtaposed and balanced to create the perfect
dining experience one can enjoy in each bite. We offer bold and dynamic textures
that are as visually appealing as they are succulent.
